3 TBS ground golden flaxseed
2 TBS coconut flour
1/2 t baking powder
4 egg, separated
dash of salt/onion powder/pepper (optional flavorings)

Preheat the oven to 325 degrees F. In a medium-small bowl mix the dry ingredients - the golden flax meal, coconut flour, baking powder, and spices.
Whip the egg whites until fluffy. Slowly add the yolks, and then the dry mixture. Allow the dough to sit for 5 minutes to firm up. Spoon the dough into a greased "donut" mold (Click here for Amazon.com) or shape into bagels on a cookie sheet. Bake for 30 minutes until the flax turns a darker golden shade. Allow to cool in the oven. Craig loves his sandwiches made with these. Makes 6 bagels.
NUTRITIONAL Comparison:
Small "LENDER's Bagel = 140 calories, 29 carbs, 1 fiber
Flax bagel = 88 calories, 4 carbs, 2.7 fiber (1.3 effective carbs)

ReplyDeleteYou could use 2 TBS grapeseed oil or melted coconut oil, but I found I didn't need it.

I made these this weekend. They had great flavor, but they stuck to the pan and were a disaster. Do you grease the pan? We did, but still no luck, but now I am wondering if we should not have. Your recipes are awesome. I am thinking of making the cinnamon bread - NOW! Thank you!

DeleteJust made these and it was so quick and easy... a truly efficient recipe! I LOVE efficiency! But even more, I LOVE bagels and this one really hits the mark. I did not use any oil and I did spray the pan, but they stuck miserably and broke into pieces. I will use butter and almond flour next time to grease pan. The bagels, though, (or pieces of them) were wonderful! Will try them again as soon as my pan cools. Thanks, Maria!!
