You can’t hide a lot of super-healthy foods...I don’t think I could disguise salmon in an ice cream and my nephew will never try “KALE CHIPS” again! But flaxseeds have an agreeable flavor and texture for kids. Flaxseeds are great sources of omega-3s (proven to help with improved learning capacity as well as many other health benefits), they are also affordable and tasty. Try adding them to trail mix or making “healthy candy” by mixing them with xylitol honey and toast them on low heat. Once your kids get used to the nutty flavor, you can work them into other not-so-sweet recipes like salads. They are also filled with fiber to help balance our blood sugar out when we eat excess carbohydrates and sugar.
Eczema is an auto-immune response. And there is more and more proof that food intolerance (as well as food allergy) effects the immune system. Eliminating common allergens such as gluten and dairy often clear up the skin. Adding freshly ground flax can clear the skin up even faster. Prostaglandins influence skin health and are the body’s chemical messengers. It is created from the essential fatty acids that we eat, such as flax, seafood and evening primrose oils. They are not stored in the body. This is why consuming essential fatty acids every day is so important! Please be aware that during the healing process your body eliminates toxins from the cells which had built up and eczema may reappear or get worse for a period of time. This process is known as a healing crisis. Here is a yummy muffin filled with protein and fiber! If you spread a little peanut butter on the finished product, it tastes like a "peanut butter cup!"
"Healthified" Chocolate Flaxseed Muffins
1 cup flax seed meal1/2 cup chocolate egg white or whey protein
4 tbsp coconut oil or butter
1/4 cup Erythritol and 1 tsp stevia glycerite (or 1/4 cup Swerve)
2 large eggs, lightly beaten
2 tsp baking powder
2 tsp vanilla extract
1/2 tsp salt
2 oz chopped almonds (optional)
1 c unsweetened chocolate almond milk or coconut milk

Traditional Chocolate Muffin = 401 calories, 21g fat, 5g protein, 61 carbs, 3g fiber

DeleteI made these today and doubled the recipe (forgot to double the coconut oil - oops) used this awesome dark chocolate extract that I have instead of the maple and added cacao nibs for some texture. They turned out fantabulous.

DeleteI just made these and love love love them! I only had vanilla flavored jay robb whey protein and they turned out great. I did add a T of unsweetened cocoa and a pinch of baking soda also. I am thinking of doing a cross between this recipe and your Zucchini muffin recipe.....

ReplyDeleteI tried them yesterday with a few modifications (I did not have almond milk or Swerve sweetener, I just used egg whites instead of the powder, added a bit more cacao powder and used xylitol to sweeten them, and finally I baked them for 45mn). We all loved them! It turned into a batch of 16 muffins and we had a few for dinner as dessert with a home-made vanilla cream (whipped cream + a bit of Greek yogurt, pure organic vanilla powder and xylitol). They all "disappeared" within 12 hours :D
By the way, I have a recipe to give you. Since I grew up in France, I had been a fan of the so-called "tarte normande". I made my own low-carb'ish non wheat version and it turned out absolutely delicious! I will give you the recipe as soon as I have time.

DeleteI made another batch but with whey powder this time (had some in the back of my pantry) and I got exactly what you said (12 muffins ready in 30mn). Really good stuff!
But to be honest, I am not a big fan of whey. It is quite insulinotropic and is probably only meant for babies to grow by triggering the production of growth hormones. To my mind, it is something to be avoided (all the more as you get older) for obvious reasons: growth hormones may not discriminate between healthy and malignant cells.
I wonder what your opinion on this may be. But thanks for yet again an excellent recipe!

A good whey protein (no added sugar) will not increase insulin if you stick to a high fat, moderate protein, low carb diet. If you get too much protein it can turn into glucose, but that is why I advocate a moderate protein diet. Here is a link with a list of benefits of whey protein. ;)

DeleteNever got a chance to reply back, but milk protein IS QUITE insulinogenic (casein and whey). However, what seems to save the day is the presence of glucagon, which cancels out the effect of insulin. Indeed, a study has shown that while insulin is produced due to casein ingestion, blood glucose did not drop! And that's due to glucagon which serves to keep blood glucose stable while insulin does its job. Sugar ingestion on the other hand does not at all produce the same effect since glucagon would interfere with insulin in its job to remove excess blood sugar from the blood stream ... makes sense doesn't it! Isn't the body smart ... :)

DeleteMaria, just wanted to let you know I'm still making those regularly, my daughters love them and hubby too! Lately I've been taking the easy route and making them in a double batch baked in a 9x13inch pan, and cutting them like brownies! Yummo!!! Less dishes too as I line mine with baking paper! So if someone doesn't have muffin or donut pans, they can still make them! They'd just need to adjust the cooking time a bit. I'm about to go make another double batch! :)

DeleteI made these today and wow are they good. I add chia seeds to almost everything and added them to this recipe too. My hubby likes a certain high carb muffin and I told him 'these are mine' but now he wants to steal them from me! I then turned around and made his muffins but substituted almond flour for wheat flour, but the recipe also calls for some wheat germ, soy flour, brown sugar and corn meal but in smaller amounts, still NOT low carb but I think the almond flour is better than wheat. I am going to tell all my friends and family about these flax meal muffins!

DeleteMaria - this is the first I've heard of a "healing crisis" but I wonder if that's what my sister and I are suffering through. We've eliminated all gluten/wheat, grains, sugars, starches, and most dairy from our diet about 1-2 months ago and ever since we've been suffering from very flaky, itchy scalp. I have heard it may be a process of detoxing ... but I kind of hoped we would be through it already. Any thoughts on how long a "healing crisis" could last? And yes, we have added ground flax to our diet!

DeleteHi Maria, these muffins were sooooo good. I doubled the recipe and baked in a 9 x 13 dish as suggested by France. My boys can't say enough about them...the nice thing about these is that I can pack them in lunches without worrying about allergies (our school is nut free). Thank you so much these were a huge hit.
